One of my preferred recipes for red beans – ideal during the cold winter months

Ingredients
- 150 d of dry red beans or 300 gr of cooked red beans
- 500 g of peeled tomatoes
- 140gr or one small can of canned corn
- 2 handfuls of textured soy
- 1 onion
- 1 clove of garlic
- 1 teaspoon ground cumin
- 1 teaspoon oregano powder
- salt
- pepper
- olive oil
Preparation
- Soak the beans for 12 hours.
- Chop the onion and garlic.
- Cook the red beans for 45 minutes (if they are not cooked), then discard the cooking water.
- Add water, peeled tomatoes, soy, corn, onion, garlic, cumin, oregano, olive oil, salt and pepper.
- Cook for 30 to 45 minutes (until the beans are cooked) Stir occasionally and add water if necessary.
- Serve preferably with rice
